Cheesy Chicken Casserole

Chicken Casserole

Ingredients

  • 2 chicken breasts cooked and taken off bone
  • 2 cans cream of chicken soup
  • 2 cans milk
  • 1/2 onion
  • 1/2 green pepper
  • 1/2 cup chopped carrots
  • 1 cup sliced mushrooms
  • 12 oz, noodles
  • Olive oil
  • Grated Colby jack cheese

Instructions

Saute the onions, peppers and carrots until tender in olive oil. Cook the noodles and drain. Spray a 9×13 glass baking dish with vegetable spray and place cooked noodles in. Mix in cooked chicken and sautéed vegetables, add mushrooms. Mix soup with milk and cover noodle mixture. Stir grated cheese throughout and sprinkle top with more cheese. Bake for about 40 minutes at 350

You can substitute any fresh vegetables such as zucchini or asparagus.
