Chicken in Cast Iron

Chicken cooked in a cast iron skillet is so tender and delicious.

 

 


Ingredients

  • Boneless chicken breasts
  • Chicken seasoning
  • Garlic and rosemary seasoning
  • Olive oil
  • Chicken broth

    Instructions

I coat the chicken breasts with olive oil then sprinkle generous amounts of the seasonings. I heat olive oil in my cast iron skillet and cook the chicken for about 10 minutes until each side is nicely browned. I then add chicken broth and continue cooking until done, about 40 minutes. The chicken broth makes a really good sauce as it cooks and you can pour this on the chicken when you serve it. It’s such a simple way to prepare chicken but it is incredibly tender and so good served with wild rice.  Leftovers are great sliced on a salad.
