Low Sugar Strawberry
Rhubarb Jam
Ingredients
- 4 cups crushed organic strawberries
- 2 cups chopped rhubarb
- 1/4 cup lemon juice
- 4 cups sugar
- 1 package low sugar powdered sure jell
Instructions
Crush strawberries and add chopped rhubarb
Add lemon juice.
Mix 1/4 cup of sugar that you have measured ( the 4 cups) with the sure jell. Add this to strawberry rhubarb mixture and bring to a boil.
Add remaining sugar and bring to a boil and boil for 1 minute.
Ladel into clean sterilized jars and put canning lids and rings on. Boil in water bath canner for 10 minutes.
This is a recipe I have used for years. I’m trying to lower the sugar content. The regular amount would be 5.5 cups. It is very delicious and I make it every year while I have fresh rhubarb. I freeze extra rhubarb for pies and extra jam later in the year.
