Fabulous Chocolate Éclair Cake

This chocolate éclair cake recipe is a family favorite. I was given the recipe many years ago and have modified it to the specifications of my family. My son James asked me to make him one for his birthday one year and he absolutely did not share it with us, it’s that good! We don’t have it very often because it is so rich but the flavors are so delicious! I’m positive chocolate éclair cake isn’t good for you but we all deserve a little splurge once in awhile.


Ingredients

  • 1 cup flour
  • 1 stick butter or margarine
  • 1/4 tsp. salt
  • 1 cup water
  • 4 eggs
  • 2 pkg. instant French vanilla pudding
  • 2 1/2 cups cold milk
  • 8 oz. cream cheese
  • 1 large carton cool whip
  • 1 cup chocolate chips
  • 3 T. butter
  • 1 1/2 cups powdered sugar
  • 5 to 6 T. milk

Instructions

Bring water and butter to a boil in saucepan until all butter is melted.  Remove from heat and add flour and salt.  Beat with mixer until mixture forms a ball that leaves sides of pan.  Cool slightly.  Add eggs and beat well.  Spread mixture in ungreased 10 x 15 x 1 inch jelly roll pan. Bake at 375 for 25-30 minutes. Remove from oven and poke the bubbles in the pastry with a fork to flatten it. Cool completely.

Mix instant pudding with milk and add softened cream cheese.  Beat together and spread on cooled pastry.  Spread cool whip over pudding mixture. Melt chocolate chips and butter add milk and powdered sugar to form a thin glaze. Drizzle chocolate glaze over cool whip.  Refrigerate for at least an hour.  I usually don’t use all the chocolate glaze but freeze half of it for the next cake.
